This is a great multipurpose plant producing edible seeds and also an attractive flower. It is known as a survival food which provides large amounts of energy, vitamins A, Bs, D and has 30% protein in the seeds. Seeds soaked in water are an excellent thirst quencher. It also contains a natural enzyme which catalyses protein. Can be used a forage, sprouts, salad dressings, yoghurt, dips, spreads or even use the gel from soaked seeds as a food thickener to increase fiber whilst reducing calories.
